Ham Games


I do the same “trick” with ham that I do with turkey.
When it goes on sale (.99 cents a lb this year) I buy
the biggest one I can find and have them cut it in
half for me. ( Long ways) .
Then I wrap one half up real tight and toss in the
freezer and bake the other half.
The half ham still looks lovely on the platter and we
have several meals before it’s a pain.

This year I glazed the ham with a jar of home canned
pepper jelly. It got rave reviews to say nothing of
the breakfast of toast and a bit of pepper jelly and a
thin slice of ham.

Because of splitting the ham we have the original
dinner, several breakfast slices, a couple of
sandwiches , enough strips and pieces for ham and
scalloped potatoes, and the bone for the New Years
black-eyed peas. And half a ham left to cook fresh
and enjoy later in the year.

Some of the ways we use the ham:

Diced potatoes, ham, onion, egg, as a scramble
and wrapped in tortillas.

Quiche -eat it all now or freeze

Make up little baggies of diced ham and onions and
bell peppers to throw in freezer and have for a fresh
omelet or scrambled eggs.

Ham fried rice ( holds well in a crock pot for party )

Ham croquettes ( using the leftover mashed potatoes )

Ham and scalloped potatoes with a cup of full bodied
salsa thrown in (leftovers make a great soup)

Ham salad or spread for crackers or sandwiches

Layer of cheese sauce, broccoli, diced or sliced ham
more cheese sauce bake in individual servings and top
with chopped boiled egg.

In the summer sliced ham and honey dew or cantaloupe
melons (good stuff!)

All the wonderful bean and ham dishes and soups cooked
slow all day in the crock

So there you are...one ham and a bazillion ideas!
