Aunt Helen's Baked Chicken Salad

(for a crowd)

 

1 - 16 oz jar Lite or Fat Free Mayonnaise

3 cans Healthy Choice Cream of Chicken Soup

2- 4 oz cans mushrooms

5-12 oz cans chicken breast, packed in water

2 boxes Uncle Bens Long Grain and Wild Rice (prepared)

1 medium onion, chopped

1/2 cup slivered almonds

1 large can Durkees French Fried Onion rings

 

Mix everything together except the onion rings.  Spoon into casserole dishes. (There will be enough for a 9x12 AND an 8x8 casserole.)  Bake at 400 degrees for about 30 minutes or until heated through and bubbly at edges.  Remove and top with the onion rings.  Put back in the oven until the onion rings are toasted and crispy.

 

 

3 Dots per 1/2 cup.

Makes about 12 cups
