Ceviche-Nana Style

6 Servings @ 3 PPVs (from Recipe Builder)

Ingredients

 
  1 pound(s) cooked shrimp   
  1/2 cup(s) celery   
  1/3 cup(s) scallion(s)   
  9 Tbsp unsweetened lime juice   
  1/4 cup(s) cilantro   
  1 medium tomato(es)   
  1/2 medium avocado   
  1 serving(s) Dry Ranch Dressing-1 Tbsp   
  1/4 cup(s) chopped red hot chili peppers, or to taste   

Instructions


Chop veggies and shrimp and cilantro. Place in bowl with lid. Add lime juice and dry Ranch Dressing. Stir to blend well. Put lid on bowl and place in refrigerator for several hours or over night.. Serve with baked corn tortilla chips. (add PPVs)
Option: Serve with mini Filo cups. 3 cups = 1 PPV.
NOTE: Without the avocado it is 2 PPVs per serving.
