Crock Pot Breakfast

12 -1  cup servings @ 9 PPVs  each (from Recipe Builder)

 

32 oz frozen Hash Brown potatoes

1 lb cooked diced ham (lean)

1 onion, diced

1 green pepper, diced

1 1/2 cup low fat shredded cheese

12 eggs

1 cup fat free milk

1 t salt

1 t black pepper

 

Divide the potatoes, ham, veggies and cheese so you can create several layers of each in the crock pot.  Start with the hash browns, then ham, onions, peppers and the cheese last. Repeat until you have several layers.

Beat eggs, milk, S&P and pour over the layers in the crock-pot.  Cover and turn on Low.  Cook for 10-12 hours overnight.
