Cucumber Raita

1 Dot per ½ cup serving

8 servings

 

 

This is a traditional Indian side dish served with spicy curries.   If you like curry you can substitute curry for the cumin.

 

Ingredients

2 large cucumbers, peeled, seeded and chopped

1 medium onion, finely chopped

1 Tbsp salt

2 cups plain, nonfat yogurt

½ tsp ground Cumin

Black Pepper to taste

 

Directions: 

Mix the cucumbers, onion and salt in a bowl.  Let stand 30 minutes.

Drain off liquid, rinse well with cold water and drain well.

Add the yogurt, cumin and pepper.  Refrigerate for at least 2 hours before serving.
