Curried Chicken Salad
6 servings @ 2 DotsPlus each

 

2 medium oranges or 1- 11 oz can mandarin orange sections, drained

1 cup chopped cooked Chicken  breast 

2 cups seedless red grapes, halved

1- 8 oz can sliced water chestnuts

1 cup thinly sliced celery

 1/3 cup FF mayo or Miracle Whip

 4 oz Weight Watchers lemon flavored yogurt

 2 teaspoons soy sauce

 1 teaspoon curry powder

 

1. If using fresh oranges, peel and slice; halve or quarter each slice. In a large mixing bowl combine oranges, chicken, grapes, water chestnuts and celery.

2. For dressing, in a small bowl stir together mayo or Miracle Whip, yogurt, soy sauce and curry powder. Pour dressing over chicken mixture; toss lightly to coat.

Cover and chill for 4-24 hours.
