Gazpacho-the Easy Way!

Cool and refreshing on a hot Summer day!

2 Dots

 

 

2 (14.5) cans diced tomatoes, in tomato juice

1 medium cucumber, peeled and chopped

1 medium onion, peeled and chopped

2 Tablespoons dry Ranch Dressing

1/4 cup vinegar

 

Mix everything together.  In small batches gently pulse mixture in a blender...DO NOT PUREE!  You want it coarsely done.  Refrigerate 2-4 hours.  Serve with a dollop of fat free sour cream.

 

NOTE:   Try adding a can of Great Northern beans, rinsed.  That will add 3.5 Dots to the whole batch!
