Marinated Corn Salad 
6 servings (1/2 cup ea)@1 Point/serving 

 

16 oz frozen white corn

1 medium red onion, chopped fine

1 medium green or red Bell pepper, chopped fine

1 medium cucumber, peeled and chopped fine

1 medium tomato, chopped fine

1/3 cup seasoned rice vinegar

1-2 Tablespoons Dry Ranch Dressing mix

 

 Mix all ingredients together and marinate

4 hours or over night in refrigerator.
 

IDEA:  You can substitute 1/3 cup Fat Free Italian Dressing

for the vinegar and the Dry Ranch.
