Mom’s Chicken Tetrazzini

Ingredients
1 cup
celery, chopped
1 cup
onions, chopped
Non-stick
Spray
Salt and
Pepper, to taste
1 cup
chicken broth
2 cans
Healthy Request Cream Mushroom Soup
8 oz cooked
whole wheat spaghetti
4 cups
chicken, cooked and cubed
one half cup
chopped pimento
8 oz Fat Free sharp cheese, grated
In a non-stick skillet
sprayed with non-stick cooking spray cook celery and onion until tender.
Add chicken broth (you may use more than 1 cup, if necessary) and salt and
pepper and simmer several minutes. Add soup, grated cheese, spaghetti,
chicken and pimento. Mix well. Place in large casserole. Heat thoroughly
in a 350 degree oven.
