Pizza Muffins
2 cups all purpose flour 1 cup shredded fat free mozzarella cheese ¼ cup diced turkey pepperoni 2 ¾ tsp. baking powder 1 tsp dried oregano ¾ tsp garlic salt 1 cup tomato juice 1 large egg 6 teaspoons grated parmesan cheese
Combine flour and the next 5 ingredients in a large bowl; make a well in the center of the mixture. Add the tomato juice and the egg and stir until the dry ingredients are moistened. Spoon mixture into lightly greased muffin tin, filling 2/3 full. Sprinkle each muffin with ½ tsp grated parmesan cheese. Bake at 400 degrees for 20 minutes or until lightly browned. Let stand 3 minutes before removing from the pans. 12 muffins @ 3 Dots each |
