Roasted Vegetables

6 servings @ 0 DotsPlus each

  • 1 cup mushroom
  • 1 cup onion
  • 1 cup zucchini
  • 1 cup sweet red pepper
  • 1 Tbsp lemon pepper
  • 1 cup yellow summer squash
  • 1 medium green pepper
  • 6 second spray PAM Cooking Spray

 

Chop all vegetables coarsely and spray with Pam Olive Oil spray. Sprinkle with the lemon pepper and spread evenly on a non-sprayed cookie sheet.. Bake at 425 until brown and roasted...about 20-25 minutes.  Stir and rotate after about 15 minutes.
