SOMETHING CHICKEN

• 3
chicken breasts (cooked and cut up) boneless and skinless
•
1 can Rotel
•1
can diced tomatoes
•1
can cream of chicken soup 98% fat free
•1
can cream of mushroom soup 98% fat free
•1
can enchilada sauce
•1
can black beans or pinto beans ( drained)
•
6 soft corn tortillas ( cut each tortilla in 4 pieces)
•1
8oz pkg of grated cheddar cheese ( fat free)
•shredded
lettuce,
fat free sour cream,
salsa
•MIX
soups, Rotel, tomatoes, enchilada sauce, beans together.
Line 9x13 dish with half of cut up tortillas. Pour half
of soup mixture over tortillas
add half of chicken
sprinkle with 1/2 of grated cheese. REPEAT. BAKE 350 40
mins.
TOPPING: When ready to serve top with shredded lettuce, 2
tbsps fat free sour cream, 2 tbsps salsa.
