Spiced Baked Apples with Vanilla Sauce 

1 Point per “apple” with ¼ cup sauce

 

4 medium apples

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 cup SPLENDA

1 Tbsp lemon juice

1/4 oz fat-free sugar-free instant vanilla pudding mix,

about 2 Tbsp

1 cup fat-free skim milk
 
Core and Slice apples. Splash with 1 Tbsp lemon juice.  Mix Splena and spices together in a small bowl. Place apples in microwaveable dish, sprinkle Splenda and spices over them. Cover and microwave for 7-10 minutes (until soft).
 
Pour pudding mix into a medium bowl; whisk in milk to make a fairly thin sauce. Place 1/4 apples in a small bowl and drizzle with sauce.
