Sweet Potato
Chicken Dinner
4 servings @ 5 Points each
2 medium sweet potatoes
2 cups cooked chicken breast
10 oz frozen mixed vegetables 1 cup onion, chopped
1 can 94% Fat Free Cream Mushroom Soup, undiluted
1/2 tsp ground sage 1/2 tsp black pepper 1 Tbsp fat-free margarine
Mash sweet potatoes until smooth. Beat in the 1 tablespoon ff margarine.
Set aside.
In a large skillet sprayed skillet add onion; cook for 4 to 5 minutes or until
tender. Stir in chicken, soup, peas and carrots, and sage.
Cook and stir until bubbly.
Spoon mashed sweet potatoes into 6-8 mounds on top of chicken mixture.
Simmer, covered, about 10 minutes or until heated through. Sprinkle with pepper. Makes 4 servings.
